Ok so here we go...

 

took the chicken and shredded it...little more seasoning

at at the same time decided to do some shrimp enchiladas

squeezed lime and salsa like ingredients

now I lightly fry tortillas in olive oil

start assembly...little cheese and chicken

Then cheese & oregano

into the oven 400 bout 20-25 mins until things brown up

First I'd like to say this is a friggin great thread.  Z-Labs personal cooking channel ;)

Everything looks so dang tasty.  Also... big props to men who cook :)

Second... I'm glad to see that I'm not the only one who uses paper bowls haha.

I know it's soooo wasteful but dammit, if I'm brutally honest... I despise washing dishes!

 

Bravo everyone, good eats.

 

Oh... and I agree, that queso is an absolute must for melty mexican dishes.

I enjoy cooking for others,  just not so much for myself so I usually end up with one pot meals (less clean up, lol).

I do not often follow any recipe, rather I look to see what I have, what I have a taste for and throw it all in the pot.

This is something I threw together awhile back and the reason I snapped a pic is because I used cannabis fan

leaves for some green.  I didn't want to toss them in the trash and won't compost them here so... into the pot

they went.

 

Chicken breast, sweet peppers, sweet onions, spices and canna leaves.

I served it over brown basamati rice with a fresh kale salad, it was tasty.

@Limos Sure, why not... beer has nutritional value.  Heck after a couple who's hungry anyway haha.

 

I tried some of this last week.  I was told "imi, you won't like it".  "I can drink it" I replied.  NOT!

Whewie, 2 drinks and I passed the can lol.  I guess hoppy beers are not my thing.

More crockpot...got a nice London broil I'm gonna turn into pot roast...don't judge. 

 

I seasoned up the meat a bit more the veggies

Thanks! My real name is Greek in orgin but I'm not to my knowledge. More German/Irish than anything else. So with that in mind, here's some tacos
