Limos Posted February 12, 2017 Author Share Posted February 12, 2017 Ok so here we go... took the chicken and shredded it...little more seasoning at at the same time decided to do some shrimp enchiladas squeezed lime and salsa like ingredients this is the cheese...gotta do that one par cooked the shrimp this is my base sauce for all now I lightly fry tortillas in olive oil start assembly...little cheese and chicken More sauce in top Then cheese & oregano into the oven 400 bout 20-25 mins until things brown up now shrimp now time to chow Link to comment

Guest imiubu Posted February 24, 2017 Share Posted February 24, 2017 I enjoy cooking for others, just not so much for myself so I usually end up with one pot meals (less clean up, lol). I do not often follow any recipe, rather I look to see what I have, what I have a taste for and throw it all in the pot. This is something I threw together awhile back and the reason I snapped a pic is because I used cannabis fan leaves for some green. I didn't want to toss them in the trash and won't compost them here so... into the pot they went. Chicken breast, sweet peppers, sweet onions, spices and canna leaves. I served it over brown basamati rice with a fresh kale salad, it was tasty. Link to comment
