I had never made these b4 a 4th outing a few years ago and were they ever a hit.

Yeah, like crack good for sure.

I made 1/2 batch plain cream cheese the other half I added granulated garlic.

I liked the garlic ones better.

Dam, now I gotta go get some peno's lol.

Ok so decided to make some munchies for the super bowl later. I have made stir fry & egg rolls for the family before but thought I'd infuse some spicy Spanish style terps into some spring rolls this time instead. I have no recipe I'm kinda making this up as I go so...start with the chicken breasts like above but a little more heavy on the spices. 

 

Chicken breasts

4 Jalapeños diced

crushed red pepper

lime squeezed

Oregano 

salt pepper

garlic powder 

 

gonna bake at 375 for like 45 mins

Ok so I chopped up the chicken now baked & added

 

black beans 1 can 

corn bout a can but frozen 

tomatoes diced 2 romas 

green pepper 1/4

 Cilantro 

salt 

pepper

bout a half small onion 

and a couple dashes of Tabasco

cooked it up a bit...

then took the spring roll wrappers and put em in some water

and I would have liked to use a different mex cheese but I only had a 4 mex cheese shredded...so assembly goes like this...

so now I make a sauce for dipping. I've always like the red cabbage beet lime salad so I thought I'd try to capture that in a creamy dipping sauce. 

 

Took a a bit of

 

red cabbage 

lime

sour cream

salt 

pepper

parm cheese 

 

and blended it up in the ninja

Yeah @zoot it was a failure pretty much I just poured the dipping sauce on top cause they weren't stable enough to pick up. More like an enchilada. Oh well I'll come back to that one.

I'm a pretty mellow guy & I think most people who met me would agree.

 

Jack is the one drink that pumps up the asshole volume. I'll pass on the jack :)

Takillya is my do only in moderation and make sure there isn't any awhile magnets around drink. I like forty creek. Grate for sippin and chasin with a hiny

Ok fuckers I'm out for redemption since the last dish turned out more like enchiladas...why fight it. I made the chicken enchiladas before but went down with the old site so gonna do it again. Gonna do a twist this time though. 

 

3 breasts in a crockpot at about 10:30 this morning

it's ice fishin season up here in the north and here's one of my favorite snacks that all my friends request when they come up for a visit.

They are called Kokanee nuggets. Kokanee is a freshwater/landlocked Sockeye salmon, occuring naturally in many lakes in western canada. I think they have em in Alaska too. Tasty little buggers they are ...... especially deep fried in beer batter ;)

easy batter recipe, works for anything you want to deep fry from jalepeno poppers to mushrooms to chicken ect ect.... just spice to your taste

1 cup flour

1/3 cup instant pancake mix

1/4 teaspoon baking powder (not soda)

1/2 teaspoon salt or to taste (I use coarse sea salt)

2 teaspoon dried crushed dill weed

1/2 teaspoon garlic powder(not salt)

1/2 teaspoon onion powder

1/3 cup lemon juice (or lime or pineapple or mango .... or your favorite citrus juice)

1/2 to 3/4 bottle of your favorite beer.... light beers don't work so well..... however I prefer corona or a sleemans honey brown for this recipe

mix and add cold water till thick and the batter "just" drips.... a wee bit thicker than pancake batter.

after dipping in batter one can also roll in a crumb of panko, but i like to crush special K cereal into "panko" and use that for a crispier texture. Didn't do that for these ones but i do it often like that
